Frosted Peppermint Gingerbread Bars: Your New Favorite Holiday Treat
Inspired by the beloved Candy Lasses cookies, these decadent gingerbread bars are a symphony of warm spices and cool, refreshing peppermint. Topped with a luscious vanilla buttercream, they offer an unforgettable flavor combination that perfectly captures the spirit of the holidays. Gingerbread and candy cane – it’s a match made in winter wonderland heaven. Truly, don’t knock it until you’ve savored every festive bite!
Embracing the Beautiful Chaos of the Holiday Season
The holiday season, for many of us, is a wonderful whirlwind of family, friends, and, let’s be honest, a fair amount of joyful chaos. These are the times when memories are made, often amidst unexpected adventures. Just the other night, while my husband and I were watching our friend’s three energetic kids, our house quickly transformed into a delightful playground. Within the first twenty minutes, all three children had managed to acquire some minor bumps and scrapes – a testament to their boundless energy and curiosity. If you’re looking for an unconventional way to build lasting friendships, surviving a lively evening with little ones might just be it!
In my defense, their spirited four-year-old was utterly captivated by her six-month-old brother. Her adoration manifested in an enthusiastic, albeit slightly perilous, series of interactions. I distinctly recall the sequence: gentle cooing, waving toys, and then, a surprising attempt to roll him over and over across the living room floor. “Wait, STOP! No, put him down! GET BACK HERE—!” I shouted, just before a minor head bump occurred. Poor baby! But rest assured, it wasn’t *my* fault; sometimes, holiday excitement brings out the wildest instincts in even the sweetest children. These vivid, sometimes chaotic, family moments are what truly define the holiday season for me, blending laughter, a little bit of mayhem, and an abundance of love.
Sibling dynamics are certainly complex, a truth I understand all too well from personal experience and observation. My sister once recounted a memorable incident when she found her two-year-old standing over her new baby, who was peacefully asleep in a car seat under a shaded tree. The toddler had both hands raised high above her head, clutching a jagged rock, poised like a tiny, determined sacrificial priestess! It was a moment that could have been unsettling, but thankfully, no harm was done. It just goes to show, there are many “unique” ways children express their desire to remain the center of attention. Such unexpected moments add a layer of rich storytelling to our family histories, making the holidays truly unforgettable.
Discovering Your New Favorite Christmas Treat: Peppermint Gingerbread Bars
Speaking of things that can make your eyes go a little “crazy” – in the best way possible – who’s ready for some serious holiday baking? Guys, these Frosted Peppermint Gingerbread Bars are absolutely legitimate. They’ve quickly ascended to the top of my list for favorite Christmas treats, ever. They even edge out my beloved Buried Cherry Cookies (though just barely) and easily stand on par with, if not surpass, the incredible Butterscotch Pumpkin Cake. Don’t believe me? I baked three batches in one week, and they vanished faster than you can say “Happy Holidays!” Their irresistible blend of warm spice and refreshing coolness is simply captivating.
The Unexpected Harmony of Ginger and Peppermint
Now, before you become a ginger-and-peppermint skeptic, hear me out. I was once dubious too. Back in college, my best friend introduced me to these incredible Candy Lasses – a molasses-rich, gingery cookie generously dotted with crushed candy canes. My initial thought? “Uhhh, really?” But one bite was all it took for me to be an immediate convert. The fiery warmth of ginger perfectly complements the cool, crisp burst of peppermint, creating a flavor profile that is both complex and incredibly satisfying. It’s a delightful dance on the palate that screams “holiday joy.” This year, I decided to adapt that beloved cookie into a bar version because, let’s face it, the only thing better than a cookie is a bar – especially when it simplifies portioning and serving for holiday crowds, making your life a little easier while still delivering maximum flavor. You can truly taste the festive spirit in every moist, chewy square. #preach
Ingredients That Make a Difference: Fresh Ginger Flavor for Your Holiday Baking
For these delightful gingerbread bars, I used Gourmet Garden Lightly Dried Ginger. This innovative product offers the vibrant taste of fresh ginger but with the incredible convenience of a longer shelf life, lasting up to four weeks once opened. It’s an ingenious solution for anyone, like me, who often finds themselves tossing out unused fresh herbs. It eliminates waste and ensures you always have that pungent, spicy kick readily available. Both my mom and my sister-in-law, Sandi, have been loyal users of Gourmet Garden’s Stir-In Pastes for years, appreciating the same fresh flavor in an easy-to-use tube. I even incorporated their Italian Herb blend into an impromptu soup for dinner recently – proof of their versatility! If you can’t find the Lightly Dried products at your local grocery store, don’t worry – this recipe is still absolutely fabulous with regular powdered ginger. I meticulously tested both options to ensure delicious and consistent results every single time, so you can bake with confidence.
These gingerbread bars are destined to be a star on your holiday cookie plates this year. Their vibrant flavors and festive appearance will make them a showstopper. Yes, it’s finally time to plan those festive platters and spread some edible cheer! Hallelujah for holiday treats!

Ingredients
- 2/3 cup unsalted butter, softened (1 stick plus 2 and 2/3 tablespoons)
- 1 & 3/4 cup packed light brown sugar
- 1/4 cup molasses
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 4 teaspoons Lightly Dried Ginger (or 2 tsp powdered ginger), see note below for substitution
- 2/3 cup crushed candy canes, finely crushed (about 8 small candy canes)
For the Vanilla Buttercream Frosting:
- 3/4 cup unsalted butter, softened
- 2 & 1/2 cups powdered sugar, sifted for best results
- 1 & 1/2 teaspoons vanilla extract
- 2-3 tablespoons milk, or cream
- 1/4 teaspoon salt
- 3-4 crushed candy canes, for stirring into frosting or sprinkling on top (coarsely crushed)
Instructions
-
Preheat your oven to 350 degrees F (175 C). Line a 9×13 inch glass baking pan with parchment paper or aluminum foil, ensuring an overhang on the sides for easy lifting. If using foil, lightly spray it with nonstick cooking spray to prevent sticking.
-
In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter for 1-3 minutes on medium speed. Remember to stop and scrape down the sides of the bowl as needed until the butter is light and fluffy.
-
Add the brown sugar to the beaten butter and continue to beat for another 1-2 minutes until the mixture is well combined and creamy. This step helps create a smooth base for your gingerbread bars.
-
Next, incorporate the molasses, eggs, and vanilla extract into the mixture. Beat thoroughly, again making sure to scrape down the sides of the bowl to ensure all ingredients are fully integrated and evenly mixed.
-
In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground nutmeg, and ground cinnamon until they are uniformly combined. For the candy canes, finely crush approximately 8 small candy canes in a food processor. If you’re using Lightly Dried Ginger, you can add it to the food processor with the candy canes for a finer chop; otherwise, simply add it to the flour mixture. If you do not have a food processor, place the candy canes in a sturdy zip-top bag and use a rolling pin to crush them. Finally, stir the finely crushed candy canes and ginger into the flour mixture.
-
Gradually add the prepared dry ingredients to the wet butter mixture, mixing on low speed until just combined. It is crucial not to overmix the batter at this stage, as overmixing can lead to tough bars.
-
Evenly spread the gingerbread batter into your prepared 9×13 inch pan. Bake in the preheated oven at 350 degrees F (175 C) for 27-28 minutes, or until a wooden toothpick inserted into the center comes out clean or with only moist crumbs attached. For a wonderfully soft and tender texture, much like brownies, it’s better to slightly underbake these bars.
-
Remove the gingerbread bars from the oven and allow them to cool completely in the pan on a wire rack. Patience here is key! Once fully cooled, use the parchment paper or foil overhang to gently lift the bars out of the pan and transfer them to a cutting board.
-
While the bars are cooling, prepare the luscious vanilla buttercream frosting. In a clean large bowl or the bowl of a stand mixer, beat the 3/4 cup softened butter until it is smooth and creamy, which should take about 1-3 minutes depending on how soft your butter is initially.
-
Add 1 cup of powdered sugar and the vanilla extract to the butter. Beat on low speed until combined, then increase the speed to medium and beat until the mixture becomes light and fluffy.
-
Gradually add the remaining powdered sugar, 2 tablespoons of milk (or cream), and the 1/4 teaspoon of salt. Beat well until the frosting is smooth, creamy, and wonderfully light. If you prefer a thinner consistency, add an additional tablespoon of milk; for a thicker frosting, incorporate a bit more powdered sugar. Remember to scrape down the sides and bottom of the bowl frequently to ensure even mixing and a perfect consistency.
-
Evenly spread the finished buttercream frosting over the cooled gingerbread bars. Immediately sprinkle with 3-4 coarsely crushed candy canes for a beautiful festive look and an extra pop of peppermint flavor and crunch. Alternatively, you can stir the coarsely crushed candy canes directly into the frosting for an integrated peppermint experience throughout. Now, the best part – it’s time to slice and indulge!
Notes & Tips for Perfect Peppermint Gingerbread Bars
Halving the Recipe: This recipe is incredibly easy to cut in half if you’re baking for a smaller crowd or simply want fewer bars. Simply use a 9×9 inch or 8×8 inch glass baking pan. The baking time will be roughly the same, but it’s always a good idea to start checking for doneness around the 25-minute mark to ensure perfect results and prevent overbaking.
Pan Choice Matters: I highly recommend baking these gingerbread bars in a glass pan. Glass bakeware tends to produce softer, more tender edges and a more even bake, which perfectly complements the chewy texture of these bars. If you opt for a metal pan, keep in mind that they tend to bake a few minutes faster and may result in slightly crispier edges, so keep a closer eye on them to prevent overbaking.
Crushing Candy Canes: For the candy canes mixed into the bar batter, I prefer them quite finely crushed so they blend seamlessly into the dough. However, for the festive topping sprinkled on top of the frosting, a coarser crush using a rolling pin provides a more appealing texture and visual pop, adding to the holiday charm.
Storage: To maintain their freshness and delightful texture, store these Frosted Peppermint Gingerbread Bars in an airtight container at room temperature for up to 3 days. For longer storage, they can be kept in the refrigerator for up to a week. These bars also freeze beautifully for up to 2-3 months, making them perfect for advance holiday preparation.

For the peppermint that goes directly into the gingerbread bars, I prefer it to be quite finely crushed. This allows it to blend seamlessly into the dough, providing a consistent burst of minty freshness with every bite. However, for the candy cane garnish sprinkled on top of the velvety frosting, I opt for a coarser crush, typically achieved with a rolling pin. This method yields larger, more irregular pieces that add a delightful visual contrast and an extra satisfying crunch, elevating the festive appeal of these already delightful bars.
