Crispy Egg Roll Bowl: Stir-Fry Recipe Without Wrappers

Egg roll in a bowl is the best high-protein, low-carb dinner. I love a classic fried egg roll, but don’t sleep on the filling. Ground beef, finely shredded carrots, and cabbage combine with a savory sauce in one skillet in about 30 minutes. Finish with a drizzle of Sriracha mayo. It’s simple, fast, healthy, and the whole family loves it.

My six-year-old once asked if I’d make more kids when he’s grown. Kids say the funniest things. I told him he’ll make his own someday, and that I’ll get to be a grandma — he loved that idea. Ok, back to cabbage.

Have you tried egg roll in a bowl? It’s become a favorite for good reason: angel-hair coleslaw (thinly shredded cabbage) cooks down quickly and soaks up flavor. I’ve made versions of this for years and have refined the method so it’s fast, satisfying, and reliably delicious.

I’ve been eating a bit lighter lately to get ready for summer trips (planning serious gelato consumption), and this recipe has been a lifesaver: filling, protein-packed, and packed with vegetables.

A quick and easy healthy dinner

Dinner needs to be quick, healthy, and kid-approved, and this checks all the boxes. It comes together in about 30 minutes, delivers lean protein and plenty of vegetables, and is easy to customize for picky eaters.

If a six-year-old devours a whole bowl and asks for seconds, you know it’s a winner. You can also adapt proteins, spice level, and sides to suit your household.

The sauce is boss

With a few Asian pantry staples, this dish is inexpensive and fast. Many versions use only soy sauce and rice vinegar, but adding a couple more shelf-stable ingredients deepens the flavor considerably:

  • Soy sauce and rice vinegar give essential umami and acidity.
  • Hoisin sauce adds a sweet, savory depth—think Chinese BBQ in a bottle.
  • Sesame oil brings a rich, nutty aroma that rounds the sauce.
  • Miso paste is optional but elevates umami and richness—like adding a splash of savory concentrate.
  • Sriracha-mayo is the finishing touch: mayonnaise mixed with sriracha (and a little rice vinegar if you like) makes the dish creamy and slightly spicy.

Fun twists on the recipe

  • Put an egg on it: Stir in one or two eggs after the beef is cooked for extra protein and a richer texture.
  • Change the protein: Swap ground beef for ground chicken, turkey, or pork if you prefer.
  • Wrap it: Serve the mixture in a tortilla for an easy handheld option.
  • Simplify the sauce: If you’re short on time or ingredients, omit the hoisin, miso, or sriracha—the dish will still be tasty with just soy sauce and rice vinegar.

Key ingredients

Beyond the sauce, here are the most important components. See the recipe card below for full measurements and instructions.

  • Ground beef: I like lean (93/7) so the bowl isn’t greasy. Ground turkey, chicken, or pork work too.
  • Carrots: Shredded carrots add sweetness and vibrant color.
  • Fresh aromatics: Garlic, ginger, green onions, and cilantro make a big flavor difference.

How to make egg roll in a bowl

Here’s the overall process. It looks like a lot, but it comes together quickly once your ingredients are prepped. If you stock Asian pantry staples, you’ll be able to make many other dishes with the same ingredients.

Assorted ingredients on a counter including ground beef, shredded cabbage, hoisin sauce, soy sauce, rice vinegar, mayonnaise, sesame oil, sugar, fresh ginger, green onions, a cucumber, and a bag of shirataki noodles.

Chop and prep all vegetables first—this dish cooks fast. Separate the white and green parts of the green onions: cook the whites with the beef and reserve the greens to finish the dish as a garnish.

Seed and chop the jalapeño if you want milder heat, or leave seeds in for more spice.

Three whole carrots, a partially peeled carrot with a vegetable peeler, and a pile of carrot peels are on a wooden cutting board.

Shred the carrots on a box grater or with a food processor.

Brown the ground beef in a large, high-sided skillet over medium heat. Add the chopped jalapeño, shredded carrots, and the white parts of the green onions right away. Season with kosher salt and black pepper and cook until the beef is no longer pink, about 5–8 minutes.

Stir in minced garlic and cook about one minute. Add the angel-hair cabbage (about 20 ounces total); it will seem like a lot but it wilts down considerably.

Add the sauce ingredients directly to the pan—soy sauce, rice vinegar, hoisin, and a splash of sesame oil. If you have miso, stir a tablespoon in for extra depth. Add sriracha to taste.

Let the mixture cook for another 3–5 minutes until the cabbage softens. Stir in minced ginger and cook another minute. Remove from heat and fold in chopped cilantro and the reserved green onions.

Make the Sriracha mayo by combining mayonnaise with sriracha and a little rice vinegar to taste. Drizzle over bowls or serve on the side.

What to serve with egg roll in a bowl

This dish works great on its own, but here are a few complementary sides when you want to round out the meal:

  • Rice: white rice, brown rice, or coconut jasmine rice for more flavor. For a low-carb option, serve over cauliflower rice.
  • Light salads: quick cucumber salads or pickled red onions add brightness and crunch.
  • Roasted vegetables: roasted broccoli or roasted cauliflower make easy, kid-friendly sides.

How to store leftovers

Cool the mixture and transfer to an airtight container. Refrigerated leftovers keep 4–5 days and reheat well in the microwave at medium power or in a skillet.

You can also freeze portions in freezer-safe containers or bags for 2–3 months. Thaw overnight in the refrigerator and reheat on the stove or in the microwave.

Egg roll in a bowl is the BEST high protein, low carb dinner! I love me a classic egg roll (in all its fried glory), but don’t sleep on what’s inside. Beef and finely shredded carrots and cabbage meld together with the perfect sauce, all cooked in a skillet in 30 minutes. Then top it with Sriracha-mayo! It’s easy, it’s FAST, it’s healthy, and the whole family loves it. Win!

Ingredients

  • 1 pound ground beef, 93% lean, 7% fat
  • 1 jalapeno, seeded and chopped
  • 2 large carrots, peeled and shredded
  • 1 bunch green onions, chopped; whites and greens separated
  • 1 and 1/2 teaspoons kosher salt, use 1 teaspoon if using table salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, smashed and minced
  • 2 (10-ounce) bags coleslaw angel hair, (20 ounces cabbage total)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon miso paste, optional
  • 1 teaspoon sriracha sauce, optional
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup fresh cilantro, to garnish
  • toasted sesame seeds, to garnish

For the sriracha mayo

  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha sauce, or to taste
  • 2 teaspoons rice vinegar, optional

Instructions

  • 1. Prep all vegetables so they’re ready before you start cooking.
  • 2. Remove seeds and membranes from the jalapeño if you want milder heat; chop finely.
  • 3. Peel and shred the carrots.
  • 4. Chop the green onions and divide whites and greens. The whites go in while cooking; the greens finish the dish.
  • 5. In a large, high-sided 12-inch skillet over medium heat, add the ground beef.
  • 6. Add the chopped jalapeño, shredded carrots, and the white parts of the green onions. Season with kosher salt and black pepper.
  • 7. Break up the beef and cook 5–8 minutes until no longer pink.
  • 8. Add minced garlic and cook 1 minute.
  • 9. Add the angel-hair cabbage (about 20 ounces) to the pan.
  • 10. Stir in soy sauce, rice vinegar, hoisin, and sesame oil. Add miso (optional) and sriracha to taste.
  • 11. Cook 3–5 minutes until the cabbage wilts.
  • 12. Add minced ginger and cook 1 minute; remove from heat.
  • 13. Stir in chopped cilantro and the reserved green onions.
  • 14. Make the sriracha mayo by combining mayonnaise, sriracha, and rice vinegar to taste.
  • 15. Serve hot, garnish with toasted sesame seeds and extra cilantro, and drizzle with sriracha mayo.

Notes

*This tastes best with ground beef; 93% lean keeps the dish lean without drying it out. You can substitute ground turkey or chicken if desired.
