Creamed Spinach: Your Next Favorite Side Dish Revelation

Creamed Spinach is a decadent side dish featuring tender, cooked spinach enveloped in a smooth, incredibly rich cream sauce. For many, it’s the ultimate way to enjoy this nutrient-packed green, transforming what can sometimes be perceived as “dinosaur food” into a luxurious culinary experience. The harmonious blend of savory cheese and rich butter expertly balances the natural, often slightly bitter notes of spinach. This added richness, combined with the aromatic depth of shallots, garlic, and thoughtful seasonings, elevates the flavor profile to an extraordinary level. While classically recognized as a distinguished accompaniment to meats, frequently gracing the menus of upscale steakhouses, its versatility extends far beyond.

But did you know that Creamed Spinach holds a secret superpower as “The Great Unifier” of Thanksgiving side dishes? This isn’t just hyperbole; it literally brings harmony to your plate. We all know the challenge of fitting every beloved Thanksgiving dish onto one plate, where turkey, stuffing, and mashed potatoes often compete for space. Remember last year’s plate, a delicious but somewhat chaotic assembly of festive flavors?

A plate filled with Thanksgiving food including turkey with gravy, mashed potatoes, stuffing, cranberry sauce, green beans, peas, sweet potatoes, a dinner roll, a deviled egg, and colorful desserts, with a pink drink beside it.

That feast included a festive Sparkling Christmas Slush, accompanied by a delightful array starting from the top left: pillowy Big Fat Crescent Rolls, classic Deviled Eggs, hearty Traditional Thanksgiving Stuffing, my beloved Aunt Shirley’s Creamy Mashed Potatoes, rich Make-Ahead Gravy, the star Sage Butter Roasted Turkey, simple green peas, fresh Make-Ahead Green Beans, and a vibrant Seafoam Salad in both red and green. Above that, our decadent Sweet Potato Casserole, half with streusel and half with marshmallows to please every palate, and two cranberry sauces: the traditional Classic Cranberry Sauce and my personal favorite, a lighter, relish-style one from this older post: Fresh Cranberry Orange Relish.

This culinary snapshot was taken in the era before the magnificent discovery of Creamed Spinach. But this year? This year, my entire holiday plate will be enveloped in a subtle, unifying undertone of Creamed Spinach. It will artfully bring those mashed potatoes and stuffing together, as if they were long-lost twins finally reunited. The sweet potatoes and cranberry sauce, distinct in their flavors, will discover the best friend they never knew they needed, all thanks to the cohesive power of this incredible Creamed Spinach, acting as the ultimate “glue” in your festive culinary ensemble.

It’s a sensation akin to our cherished summer staple, Joy’s Creamy Cucumber Salad. My husband, Eric, often remarks that the true magic of a summer meal, featuring Nana’s Ribs and our Literally the Best Mac and Cheese, lies in the cucumber salad’s ability to gently drench and integrate all the flavors on the plate. Creamed Spinach delivers that exact same harmonizing effect, but tailored for the rich tapestry of holiday dining!

Why Creamed Spinach is an Essential Side Dish

Let’s delve into the culinary architecture of this delightful dish:

  • **A Rich Roux Foundation:** It begins with a meticulously crafted roux, infused with the delicate sweetness of shallots and the pungent depth of fresh garlic. This foundational step is crucial for developing a creamy, lump-free sauce.
  • **A Velvety White Sauce:** This roux seamlessly transforms into a luxurious white sauce, subtly perfumed with a whisper of nutmeg for warmth, brightened by the tang of lemon zest and juice, and enriched with the sharp, salty notes of Parmesan or Pecorino Romano cheese. Each ingredient contributes to a complex flavor profile that tantalizes the palate.
  • **The Star of the Show: Spinach:** Finally, a generous full pound of fresh, chopped spinach is gently folded into this magnificent sauce, wilting beautifully to create a tender, flavorful, and incredibly satisfying side dish. This exquisite combination serves as the perfect complement to a perfectly seared Ribeye Steak or any robust main course.

When prepared with care and precision, creamed spinach achieves a sublime smoothness and silky texture, boasting a bright, creamy flavor that perfectly complements an impressive array of main courses, from succulent roasts to hearty pastas.

Key Ingredients for Unforgettable Creamed Spinach

A collection of cooking ingredients on a countertop, including flour, heavy whipping cream, milk, pecorino cheese, baby spinach, black pepper, a lemon, garlic, nutmeg, butter, and a wooden salt container.

Let’s highlight the powerhouse ingredients that imbue our creamed spinach with its irresistible deliciousness:

  • Quality Butter: The foundation of flavor and richness. Opt for real butter, as it provides an unparalleled depth and creaminess that margarine simply cannot replicate. My nine-year-old recently asked, “Mom, what’s margarine?” and honestly, I’ve never been prouder! It’s a testament to how far we’ve come from the days of margarine and nonfat milk.
  • Aromatic Shallots and Garlic: These unsung heroes are indispensable. Shallots offer a milder, sweeter onion flavor, while garlic provides a pungent, savory kick. Together, they create a fragrant base that elevates the entire dish, setting the stage for rich, complex flavors.
  • Pecorino Romano or Parmesan Cheese: While Pecorino Romano delivers a sharper, saltier kick, high-quality Parmesan cheese works wonderfully too. The secret to superior melt and integration? Always buy a block and shred your own. Pre-shredded varieties often contain anti-caking agents that hinder smooth melting, leading to a less cohesive sauce.
  • Heavy Cream: This is where the magic truly happens, transforming the sauce into a smooth, luxurious, and decadent base for the spinach. Ensure you’re selecting “heavy cream,” “whipping cream,” or “heavy whipping cream” to achieve the desired richness and texture—coffee creamer won’t cut it!
  • Fresh Lemon (Zest and Juice): Do not skip this critical ingredient! The bright acidity of fresh lemon zest and juice acts as a crucial counterpoint to the richness of the cream and cheese. It brightens the entire dish, preventing it from feeling overly heavy and adding a refreshing finish. Always opt for a fresh lemon for the best results; bottled juice simply lacks the vibrant punch.

Crafting Creamed Spinach: A Step-by-Step Culinary Journey

Let’s begin by preparing our essential aromatics! I often wonder who first coined the term “aromatics,” suggesting a gentle, rose-scented experience. In reality, shallots, in particular, can be quite the tear-jerker. For a truly tear-free prep, consider wearing swim goggles – it works wonders!

Two photos of a wooden cutting board with a knife. One shows unpeeled and chopped garlic and shallots; the other shows finely chopped garlic and shallots in separate piles.

Once your shallots are finely diced and garlic expertly minced, set them aside. Next, carefully measure out all the spices required, ensuring you have everything at hand for a smooth cooking process.

A small bowl of spices and measuring spoons on a counter, and a saucepan with melting butter, chopped onions, and spices being stirred with a wooden spoon.

Introduce the chopped shallots and measured spices into your pan, sautéing them gently for a few minutes until they soften and release their fragrant essence. Then, add the minced garlic and allow it to cook for approximately one minute, just until its distinct, delightful aroma fills your kitchen.

Two images: The top shows chopped onions and minced garlic being sautéed in a pan with a wooden spoon. The bottom shows the same mixture with flour and a small piece of butter added to the pan.

Next, sprinkle in the flour, stirring continuously until it has completely absorbed all the melted butter, forming a fragrant roux. This step is fundamental for creating a thick, smooth sauce.

Two images: Top, cooked ground sausage is stirred in a skillet with a wooden spoon. Bottom, milk is being poured from a measuring cup into the skillet with the sausage mixture.

Now, the critical part: gradually and slowly pour in the milk and heavy cream. Patience is paramount here; rushing this process can lead to undesirable lumps of flour in your creamed spinach, a culinary misstep that could spark disagreements even on a festive Thanksgiving day! Ensure each addition of milk and cream is fully absorbed into the flour mixture before adding more. This gentle incorporation is key to a velvety smooth sauce.

Two images: Top, cooked ground sausage is stirred in a skillet with a wooden spoon. Bottom, milk is being poured from a measuring cup into the skillet with the sausage mixture.

Continue this careful process, stirring consistently as the sauce slowly thickens and transforms.

Two images of a metal skillet with a wooden spoon stirring a mixture. The top image shows cream being added to the mixture, while the bottom image shows the mixture after it has been stirred together.

Eventually, you will achieve a gorgeously smooth, perfectly thickened white sauce. Take a moment to taste it – it’s utterly divine! This base sauce is remarkably similar to the one used in a classic Chicken Fettuccine Alfredo, highlighting its incredible flavor profile. At this stage, you’ll be tempted to eat it by the spoonful!

Now for the main event: incorporate a generous quantity of chopped spinach into this inviting sauce. While chopping the spinach into smaller pieces is my preferred method for a more refined texture, it’s an optional step. If time is short, feel free to add it as is. Either way, the sheer volume of spinach might seem daunting at first, but trust the process – it will wilt down beautifully.

Two images: The top shows a pan with chopped spinach on a creamy sauce, and a wooden spoon. The bottom shows the spinach stirred into the creamy mixture, creating a thick, green spinach dip.

To ensure even wilting and mixing, add the spinach in batches. Start with about half, stirring it into the warm sauce until it visibly reduces in volume. This method prevents the pan from becoming too crowded and allows for thorough incorporation.

Two images show a pot of creamy spinach mixture being stirred with a wooden spoon. The top image shows the mixture fully stirred, while the bottom shows a pile of fresh chopped spinach being added.

Then, add the remaining spinach, continuing to mix until every leaf is fully wilted and coated in the creamy sauce. The spinach will shrink significantly, integrating perfectly into the rich base.

Now, for the final, perfecting touches. Begin with a generous addition of freshly grated Parmesan or Pecorino Romano cheese, allowing its savory notes to melt into the creamy spinach.

Finally, zest and juice a fresh lemon. Remove the creamed spinach from the heat, then stir in the bright lemon zest and juice. This vital step introduces a refreshing acidity that beautifully cuts through the inherent richness of the dish, preventing it from being overly heavy and adding a delightful tang.

The lemon provides just the right acidic counterpoint, truly perfecting the flavor balance of this indulgent side dish.

Furthermore, don’t overlook the incredible potential of this dish as a dip! While extensively testing various Creamed Spinach recipes for this article, I discovered its phenomenal versatility when served with crispy pita chips or slices of a crusty baguette. It’s remarkably similar in appeal to a classic Spinach Artichoke Dip, so its inherent dippable quality should come as no surprise. All this creamy, cheesy goodness practically begs to be scooped up and enjoyed!

Expert Tips for Perfect Creamed Spinach Every Time

  • **Gradual Liquid Addition for Your Roux:** The most critical tip for a smooth sauce is to add the milk and cream to your flour-butter roux slowly. Pouring it in too quickly will inevitably result in a lumpy sauce, as the flour won’t have time to properly dissolve and integrate. Add a small amount, stir until fully incorporated, then repeat. This patience will be rewarded with a velvety texture.
  • **Maintain a Gentle Simmer:** Once the liquids are added and the sauce begins to thicken, avoid bringing the creamed spinach to a vigorous boil. High heat can cause the cream sauce to “break” or curdle, resulting in an unappealing, grainy texture. A low, gentle simmer is all that’s needed to cook the spinach and meld the flavors, preserving the delicate nature of the cream.
  • **Always Use Fresh Lemon:** While bottled lemon juice is convenient, it simply cannot replicate the bright, zesty flavor of a fresh lemon. The fresh zest adds essential aromatic oils, and the freshly squeezed juice provides a clean, vibrant acidity that cuts through the richness of the cream and cheese beautifully. Lemons store well in the refrigerator for weeks, making it easy to always have one on hand for that perfect finishing touch.

Creative Variations to Elevate Your Creamed Spinach

  • **Utilize Frozen Spinach:** While fresh is often preferred, this recipe can certainly be made with frozen spinach. You’ll need to thaw it completely and meticulously squeeze out all excess moisture before adding it to the sauce to prevent a watery final dish. More detailed instructions for this can be found below.
  • **Creamed Spinach with Chicken & Pasta:** Transform this side dish into a complete meal! Sear chicken breasts until golden, similar to the method used for Chicken Alfredo. Remove the chicken, then prepare the creamed spinach as directed. Slice the cooked chicken and stir it back into the finished spinach sauce. Serve this delectable combination over your favorite pasta for a truly satisfying and rich dinner.
  • **Gourmet Dip for Leftovers:** Don’t let any leftover creamed spinach go to waste! It makes an exceptional dip. Serve it warm with slices of a crispy baguette, pita chips, or even sturdy vegetable sticks for an impromptu appetizer or snack. Its rich, savory profile is perfect for dipping.

Using Frozen Spinach: A Practical Guide

Yes, you absolutely can make creamed spinach using frozen spinach, but it requires an essential preparatory step: thorough squeezing. Frozen spinach contains a significant amount of water, and if not removed, this excess moisture will dilute your creamy sauce and compromise its texture.

To prepare frozen spinach, first allow it to thaw completely. Once thawed, the most effective way to extract moisture is to place the spinach in a clean, old kitchen rag or cheesecloth. Twist and squeeze the rag vigorously to press out as much liquid as possible. Be warned: the spinach will likely dye your rag a vibrant, almost “Elphaba-green” color, so use one you don’t mind staining! The recipe calls for 16 ounces of fresh spinach, and typical frozen packages are 10 ounces each, so you will generally need about one and a half packages of frozen spinach to achieve the equivalent amount.

While frozen spinach is a viable option, I personally prefer to use fresh spinach for this recipe. The primary reason is that it eliminates the extra steps of thawing and extensive squeezing, making the overall cooking process slightly more streamlined and less labor-intensive.

The Perfect Pairings: What to Serve with Creamed Spinach

Truly, this exquisite side dish could complement almost any comforting main meal, and I would happily savor every bite. However, my absolute favorite way to enjoy Creamed Spinach is alongside show-stopping meat entrees, especially during festive holiday gatherings like Thanksgiving or Christmas, and even at casual summer cookouts. Its rich, creamy profile pairs magnificently with robust flavors. Explore some of these exceptional main dishes that perfectly harmonize with our Creamed Spinach:

  • **Texas Beef Brisket In The Oven:** Experience the best smoked brisket you’ve ever tasted, even without a smoker! The tender, flavorful brisket finds a superb companion in the creamy, bright spinach.

Storing and Reheating Creamed Spinach: Make-Ahead Mastery

To preserve the deliciousness of leftover creamed spinach, transfer it promptly to an airtight container and refrigerate. Due to its rich cream and cheese content, it should not be left at room temperature for more than one to two hours before refrigeration. Properly stored, it will maintain its quality in the fridge for three to four days.

For reheating, gently warm the creamed spinach in a small pot or non-stick pan over low heat, stirring regularly, until it is thoroughly heated through. Alternatively, for individual servings, you can microwave it on a plate at 50% power for one to two minutes, stirring halfway, until warmed. Be cautious not to overheat or bring to a vigorous boil, as this can affect the sauce’s texture.

As a delightful bonus, leftover creamed spinach makes an excellent dip! Serve it warm with slices of a crusty baguette or crispy pita chips for an unexpected treat.

Moreover, creamed spinach excels as a make-ahead side dish, perfect for holidays or other significant events. Prepare it according to the instructions up to two days in advance, store it covered in the refrigerator, and then simply rewarm it just before serving. This convenience allows you to enjoy the festivities without last-minute culinary stress.

Can You Freeze Creamed Spinach? Best Practices

While technically possible, I generally do not recommend freezing creamed spinach. The primary reason for this caution lies in the high water content of spinach and the delicate nature of cream sauces. During the freezing and thawing process, cream-based sauces tend to separate, resulting in a watery, grainy-textured creamed spinach that is far from its ideal, velvety consistency. The change in texture can be quite unappetizing. Since this is a relatively simple recipe to prepare fresh, I always advocate for making it just before serving for the best possible flavor and texture.

That being said, if freezing is your only option or if you don’t mind a potential change in texture, it can be done. First, allow the creamed spinach to cool completely. Then, transfer it to a freezer-safe ziplock bag, ensuring as much air is removed as possible before sealing. It will remain safe to consume in the freezer for approximately two to three months. To use it from the freezer, thaw it overnight in the refrigerator. Once defrosted, transfer the contents to a saucepan and warm it over low heat. As it warms, use a whisk (a flat whisk is particularly effective here) to vigorously remix the sauce, helping it to re-emulsify. You may find it beneficial to add a tablespoon or two of extra heavy cream, half and half, or even milk to aid in bringing the sauce back to a smoother consistency.

A wooden bowl filled with creamy spinach dip topped with Parmesan shavings, served with a slice of rustic bread and a wedge of lemon on the side.
Creamed Spinach is your new favorite side dish. What it lacks in looks it makes up for in dreamy, creamy, bright flavor. It is the perfect plate unifier; it brings together all the other elements of your meal, especially between your mashed potatoes and perfectly seared steak. But it also ties together your Thanksgiving plate beautifully. It comes together quick and you can make it ahead!

Ingredients

  • 5 tablespoons butter
  • 2 shallots, chopped (you can use half a yellow onion in place of the shallots)
  • 2 and 1/4 teaspoons kosher salt, only use 1 and 1/2 teaspoons table salt
  • 3/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon nutmeg
  • 5 cloves garlic, smashed and minced
  • 1/4 cup flour
  • 1 and 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 16 ounces fresh baby spinach, chopped
  • 1/2 cup Pecorino Romano cheese, shredded (Parmesan is great)
  • 2 teaspoons lemon zest, from 1 lemon
  • 1/4 cup fresh lemon juice, from that same 1 lemon

Instructions

  • Begin by thoroughly prepping all your vegetables. Finely chop 2 shallots and mince 5 cloves of smashed garlic. Chop 16 ounces of fresh baby spinach into smaller, manageable pieces. Set these prepared ingredients aside.
  • In a 12-inch high-sided skillet, add 5 tablespoons of butter. Melt the butter over medium heat until it is fully liquefied and shimmering.
  • Add the 2 chopped shallots to the melted butter and stir them gently, coating them in the butter.
  • Introduce all the measured spices: 2 and 1/4 teaspoons kosher salt, 3/4 teaspoon black pepper, 1/8 teaspoon cayenne pepper (which enhances flavor without adding significant heat), and 1/8 teaspoon nutmeg. Stir to combine with the shallots.
  • Allow the shallots and spices to cook for approximately 3-5 minutes over medium heat, stirring occasionally, until the shallots have softened and become translucent.
  • Add the 5 cloves of minced garlic to the skillet and stir well. Continue cooking for about 1 minute, or until the garlic becomes fragrant, being careful not to let it brown.
  • Evenly sprinkle 1/4 cup of flour over the shallot and garlic mixture. Stir continuously for 1 minute, ensuring all the butter and aromatics are fully absorbed by the flour, forming a smooth roux.
  • Keeping the heat at medium, begin to SLOWLY add 1 and 1/2 cups of whole milk. This process is crucial and should take several minutes. Pour in about 1/4 cup of milk (no need to be exact with this smaller measurement) and stir vigorously until it is completely absorbed into the flour mixture. Repeat this process, adding small amounts of milk and ensuring full absorption each time, until all the milk has been added and a smooth, thick white sauce has formed.
  • Slowly pour in 1/2 cup of heavy cream into the sauce. Stir gently until it is fully incorporated and the sauce is uniform and creamy.
  • Start adding the 16 ounces of chopped fresh baby spinach to the pan. Add the spinach in increments, piling some on top of the sauce, stirring for a minute or two until it wilts down, then adding more fresh spinach. Repeat this until all the spinach has been added. It may seem like a lot initially, but it will reduce significantly. Trust the process!
  • Once all the spinach is incorporated, reduce the heat to medium-low to maintain a very gentle simmer. Continue to simmer the creamed spinach for approximately 10 minutes. It is vital not to let the mixture come to a full boil, as high heat can cause the delicate cream sauce to break or curdle. Gentle cooking is key here.
  • After simmering for about 10 minutes, remove the skillet from the heat. Stir in 1/2 cup of freshly shredded Parmesan or Pecorino Romano cheese until it has completely melted into the creamy spinach.
  • Using a microplane grater, zest 1 lemon, then cut the lemon in half and squeeze out its juice. Add both the lemon zest and the fresh lemon juice to the creamed spinach, stirring to distribute evenly.
  • Give your creamed spinach a final taste test and adjust the seasonings (salt, pepper, or a pinch more nutmeg) as desired. A good way to gauge if it’s “done” is to ask yourself if you immediately want another bite, and then ten more! That’s usually a clear sign it’s perfect.
  • To store leftovers, place the creamed spinach in an airtight container and refrigerate. Reheat gently on low heat on the stove, stirring often, or in the microwave.
  • For make-ahead convenience, creamed spinach can be prepared up to 2 days in advance. Follow all instructions, store covered in the fridge, and then reheat on low in a pan on the stove or in the microwave just before serving. This makes it an ideal dish for holiday meal planning.

Notes

**FROZEN SPINACH:** While fresh spinach is recommended for the best texture, you can use frozen spinach, but a few additional steps are required. Frozen spinach contains a significant amount of water that must be removed. Allow the spinach to thaw completely, then squeeze out as much moisture as possible.

A highly effective method is to place the thawed spinach in an old, clean kitchen rag or cheesecloth and vigorously squeeze out the liquid. Be mindful that the spinach will likely stain the fabric an intense green! The recipe calls for 16 ounces of fresh spinach; typically, frozen packages are 10 ounces each, so you’ll need approximately 1 and 1/2 packages of frozen spinach to match this quantity.

I prefer using fresh spinach because it streamlines the process by eliminating these extra squeezing steps, leading to a quicker and easier preparation overall.
