The Irresistible Allure of Double Chocolate Caramel Cookies

There’s something uniquely comforting about a freshly baked cookie. It’s a culinary hug, a sweet escape from the everyday. And when that cookie involves a decadent combination of rich chocolate and luscious caramel, it transcends mere dessert status to become a truly unforgettable moment. Our Double Chocolate Caramel Cookies are crafted to deliver precisely that: a moment of pure bliss with every single bite.

For me, the journey to creating these perfect cookies began with a friend, Lara, who once brought over a batch of her incredible holiday treats. Each cookie boasted these mysterious, delightfully chewy morsels that I simply couldn’t identify. They melted in my mouth, leaving a sweet, buttery trail that lingered long after the cookie was gone. Intrigued, I immediately texted her to uncover the secret ingredient. Her reply? “Caramel Bits.” It was a revelation! Not chopped caramels that risk hardening or losing their texture, but specially designed little chips that integrate seamlessly into cookie dough, offering that perfect soft, gooey chew.

This discovery sparked an obsession. I began dreaming of a cookie that would perfectly showcase these magical caramel bits. I envisioned a deep, dark, intensely chocolatey base—tender and rich—infused with those incredible pockets of soft, melting caramel. And that, my friends, is exactly what you’ll find in this recipe. It’s a dream come true for any chocoholic and caramel lover.

Crafting the Perfect Rich Chocolate Base

The foundation of any exceptional cookie is its base, and for these Double Chocolate Caramel Cookies, we’re aiming for nothing less than perfection. The recipe starts with melted butter, which is a key player in achieving that signature chewy texture. Unlike creaming butter and sugar, using melted butter incorporates more sugar and less air, resulting in a denser, chewier cookie with a wonderfully rich flavor profile. This method also helps the sugars dissolve more fully, contributing to that irresistible gooey center.

We combine both granulated sugar and dark brown sugar. The dark brown sugar isn’t just for sweetness; its molasses content adds moisture, depth of flavor, and contributes significantly to the cookies’ chewiness and rich, fudgy texture. The interplay between these sugars, combined with two large eggs and a generous tablespoon of vanilla extract, creates a wet mixture that’s bursting with flavor, ready to embrace the dry ingredients.

For the “double chocolate” aspect, we’re using a full cup of high-quality cocoa powder. Don’t skimp here! A good cocoa powder will provide a deep, complex chocolate flavor without bitterness. If your cocoa powder is clumpy, a quick sift will ensure a smooth, even distribution throughout the dough. The addition of flour, baking soda, and kosher salt completes our dry ingredient blend. Kosher salt is particularly important here, as it brightens the chocolate flavor and provides a subtle counterpoint to the sweetness, elevating the overall taste.

The Secret to Unrivaled Chewiness: Caramel Bits

As mentioned, the secret weapon in these Double Chocolate Caramel Cookies is the delightful inclusion of caramel bits. These small, soft caramel pieces are specifically designed to retain their chewiness and melt beautifully within the cookie, creating tender, yielding pockets of caramel in every bite. They don’t harden like traditional chopped caramels might, ensuring a consistently delightful texture. Many brands, like Kraft, offer these innovative caramel bits, making them a pantry staple for anyone looking to elevate their cookie game.

Beyond the caramel, we also incorporate chopped dark chocolate. This isn’t just about adding more chocolate (though that’s never a bad thing!). Using chopped dark chocolate, rather than just chips, allows for a more varied melt and provides intense bursts of chocolate flavor throughout the cookie. When stirred into the dough, these two elements — the gooey caramel bits and the rich dark chocolate — combine to create a truly decadent experience that is both familiar and exciting.

When you’re mixing the dry ingredients into the wet, resist the urge to overmix. You want to stop when there are still a few flour streaks visible. Then, gently fold in the chopped dark chocolate and caramel bits until just combined. Overmixing develops gluten, which can lead to tough cookies, and we’re aiming for tender and chewy perfection here!

The Art of Baking: Tips for the Best Double Chocolate Caramel Cookies

Achieving the perfect Double Chocolate Caramel Cookie isn’t just about the ingredients; it’s also about technique. One crucial step that many skip is chilling the dough. After mixing, chilling the dough for 2-3 hours (or an hour in the freezer for a quicker option) allows the flavors to meld and the butter to firm up. This prevents the cookies from spreading too much in the oven, resulting in a thicker, chewier cookie with a more concentrated flavor. It’s a small step that makes a huge difference in the final product!

When it comes to shaping, I like to form the dough into large, “tall” oblong balls, using about a quarter cup of dough for each. This slightly elongated or taller shape helps the cookies spread slower and less dramatically in the oven, contributing to that desirable thick, chewy center. Always line your baking sheets with parchment paper or a silicone baking mat (like a Silpat) to prevent sticking and ensure even baking. Give your cookies plenty of space on the sheet; placing only 6-8 cookies on an 11×17 sheet ensures they don’t merge into a giant cookie and allows for proper air circulation.

Bake your cookies at 350°F (175°C) for approximately 10 minutes. The key is to watch them carefully. You want the edges to be set and firm to the touch, but the middle should still look slightly soft and not completely shiny. This indicates that gooey, underbaked center that makes these cookies so irresistible. Resist the urge to overbake, as it will lead to dry, crumbly cookies rather than the soft, chewy delights we’re after. Once out of the oven, let them set on the hot baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. This resting period allows them to firm up without losing their tender interior.

Warm, gooey, ultra-rich chocolate cookies with little bits of chewy caramel and dark chocolate in them. These cookies will satisfy your chocolate cravings in one bite, but you’ll certainly want more. Don’t even bother making these if you don’t have a glass of milk ready!

Ingredients

  • 1 & 1/4 cups salted butter, melted (2 and 1/2 sticks)
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1 cup cocoa powder (ensure it’s unsweetened)
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1/2 cup dark chocolate, chopped
  • 1 & 1/2 cups caramel bits

Instructions

  1. Melt the butter in a microwave-safe bowl or a small saucepan until fully liquid.
  2. Transfer the melted butter to a large mixing bowl or the bowl of a stand mixer. Add the granulated sugar and dark brown sugar, stirring until well combined and smooth.
  3. Beat in the eggs one at a time, then add the vanilla extract, mixing until just incorporated.
  4. In a separate medium bowl, whisk together the flour, cocoa powder (sift if clumpy), baking soda, and kosher salt until thoroughly combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until mostly combined. Stop when there are still visible streaks of flour.
  6. Add the chopped dark chocolate and the caramel bits to the dough. Stir gently until they are just evenly distributed throughout the dough. Be careful not to overmix, as this can lead to tough cookies.
  7. Cover the dough and chill it in the refrigerator for 2-3 hours. Alternatively, you can place it in the freezer for about 1 hour if you’re short on time. Ensure the dough is firm and cold before baking.
  8. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  9. Scoop the chilled dough using a quarter-cup measure. Shape each scoop into a “tall” oval or oblong ball. This shaping technique helps create a thicker, chewier cookie that spreads less in the oven.
  10. Place the shaped cookie dough balls on the prepared baking sheet, ensuring they are at least 2 inches apart. For best results, place only 6-8 cookies on an 11×17 inch baking sheet.
  11. Bake for about 10 minutes, or until the edges are firm and the centers still look slightly soft and not glossy. Avoid overbaking to maintain the gooey interior.
  12. Allow the cookies to cool on the baking sheet for approximately 5 minutes before carefully transferring them to a wire rack to cool completely.

Notes

  • Caramel Bits can typically be found at major grocery stores like Target, Walmart, and on Amazon.
  • While the recipe calls for two bowls, you can simplify by first whisking the dry ingredients directly into the flour in one bowl, then combining with the wet ingredients.
  • Source: This recipe is adapted from The Girl Who Ate Everything cookbook.
  • For an extra touch, sprinkle a pinch of flaky sea salt on top of the cookies immediately after they come out of the oven.
  • Store cooled cookies in an airtight container at room temperature for up to 3-4 days, or freeze for longer storage.
