Ingredients
- 20 large strawberries
- 6 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup sour cream
- 1/2 teaspoon vanilla, optional
Instructions
- Wash the strawberries thoroughly and lay them out on paper towels to dry completely.
- In a large bowl or stand mixer, beat the softened cream cheese until it is smooth and lump-free. Be sure to scrape down the sides and bottom of the bowl as you mix.
- Beat in the 1/4 cup of powdered sugar and 1/4 cup of sour cream until fully combined and creamy. For an extra layer of flavor, you can add 1/2 teaspoon of vanilla extract (this is optional but recommended!). A tiny pinch of salt can also enhance the flavors – taste and adjust to your preference.
- Decide whether you want to leave the green stems on the strawberries or remove them. Removing the stems makes them easier to eat in one bite, while leaving them on provides a very pretty, natural presentation. If keeping stems, choose strawberries that stand upright stably.
- If removing stems, carefully slice a small portion off the bottom of each strawberry to create a flat base, allowing them to sit upright with the pointy side facing up.
- Using a sharp paring knife, carefully slice each strawberry vertically in half, starting from the tip and stopping about 1/4 inch from the base. Then, slice each half into 3 wedges (for a total of 6 “petals”), again leaving them connected at the base. Gently place your finger in the center and slightly pull the petals apart to create a cavity for the filling. Refer to the images for visual guidance.
- Prepare a piping bag with a large star tip. Wilton tip 2D, which is a “drop flower” tip, works wonderfully for this, but any similar large star tip will create a beautiful effect.
- Transfer the cheesecake filling into the piping bag. A handy trick for filling the bag is to place it inside an empty tall glass and fold the edges over the rim; this makes it much easier and less messy to spoon in the filling. If you don’t have a piping bag, a ziplock bag with a corner snipped off will do the trick.
- Gently insert the tip of the piping bag all the way down into the center of a prepared strawberry. Begin piping the cheesecake filling, gradually pulling the bag upwards. As you pipe, use your other hand to gently arrange the strawberry “petals” outwards, ensuring the filling is evenly distributed and creates a lovely blossom shape at the top.
- Serve immediately for the freshest taste and appearance. These cheesecake stuffed strawberries can be prepared about 2 hours ahead of time. Beyond this, the strawberries may start to wilt slightly, and the cream cheese filling might begin to absorb some red color from the berries. Store them covered in the refrigerator until you are ready to serve.

- Chocolate Dipped: For an indulgent touch, dip the flat, cut side of cheesecake-filled strawberries (with stems removed) into melted chocolate. Combine 2 cups of semi-sweet chocolate chips with 2 teaspoons of shortening and melt until smooth.
